01 — Origin

Every bean begins its journey at altitude. We partner directly with small-plot farmers across Ethiopia, Colombia, and Guatemala — selecting only the top 2% of each annual harvest. Traceability isn't a marketing term. It is our baseline.

We pay above Fair Trade pricing. Not because we must. Because the quality of the work demands it.

02 — Roast

Our roasting protocol is a dialogue between chemistry and instinct. We roast in small batches using a 1940s cast-iron drum, measuring every variable from ambient humidity to bean density. The result: a consistent cup, regardless of the season or the barometer.

We never rush a roast. A first crack is not a suggestion. It is a conversation.

03 — Extract

Extraction is the final movement. Every espresso is pulled between 9 and 9.5 bars. Every pour-over is timed to the half-second. We do not rush. We do not apologize for the wait.

Precision is not perfection. It is respect — for the bean, for the farmer, for the person holding the cup.
